Raising Oysters in the Heart of Texas Bays
ClearWater Oyster Gardens of Texas, LLC hand-raises “Eastern Oysters" (Crassostrea virginica) indigenous to the local Texas Bays. They are grown in the southern part of Aransas Bay, Texas close to a major gulf entrance and significantly distant from any industry or major freshwater input. Our farm is over a hard sand bottom at the edge of a pristine grass flat and receives abundant nutrients and highly oxygenated sea water from the grass flat on both an incoming and outgoing tide. As our oysters are grown at the top of the water column, they are in optimal water conditions free of grit and sand with plenty of sunlight, water flow and having consistent salinity averaging 27 ppt. The pristine environment in which our oysters are hand-raised, allows for them to develop a hearty brine, with a buttery texture and a clean, sweet aftertaste.
